Corn & Avocado Salad

Corn & Avocado salad is a vibrant and refreshing dish that combines the sweetness of fresh corn kernels with the creamy texture of avocados.


Corn & Avocado Salad

Ingredients:

  • 4 Corn Cobs (3-4 Cups kernels)

  • 1 Avocado

  • 1 Cup Cherry Tomatoes

  • 2 Small Cucumbers

  • 3 Limes (juiced)

  • 2 tbsp Cilantro

  • 1/3 Cup Red Onion

  • Salt & Pepper To Taste


Directions:

  1. Cook your corn cobs using your favorite method then cut the kernels off each cob

  2. Chop the tomatoes, onion, cilantro and avocado.

  3. Add into a bowl and mix in the lime juice and salt and pepper

  4. Refridgerate for 1 hour before serving.
