Corn & Avocado salad is a vibrant and refreshing dish that combines the sweetness of fresh corn kernels with the creamy texture of avocados.
Ingredients:
4 Corn Cobs (3-4 Cups kernels)
1 Avocado
1 Cup Cherry Tomatoes
2 Small Cucumbers
3 Limes (juiced)
2 tbsp Cilantro
1/3 Cup Red Onion
Salt & Pepper To Taste
Directions:
Cook your corn cobs using your favorite method then cut the kernels off each cob
Chop the tomatoes, onion, cilantro and avocado.
Add into a bowl and mix in the lime juice and salt and pepper
Refridgerate for 1 hour before serving.
