Roasted Honey Pork Ramen with Shiitake Mushrooms

A rich and umami-packed roasted honey pork ramen, featuring tender honey-glazed pork, a savory broth infused with shiitake mushrooms, and vibrant toppings like hard-boiled eggs, cilantro, carrots, roasted corn, pickled red onions, chili crisp, and scallions.


Pork-Ramen

Ingredients: (Serves 4)

For the Honey-Glazed Roasted Pork:

  • 1 lb pork shoulder or pork belly, thinly sliced

  • ¼ cup honey

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp hoisin sauce

  • 2 tsp sesame oil

  • 1 tsp garlic, minced

  • 1 tsp ginger, grated

  • ½ tsp red pepper flakes (optional)


For the Ramen Broth:

  • 6 cups chicken or pork broth

  • 2 tbsp soy sauce

  • 1 tbsp miso paste (white or red)

  • 1 tbsp sake (optional)

  • 1 tbsp mirin

  • 1 tsp sesame oil

  • 1 garlic clove, minced

  • 1-inch piece of ginger, sliced

  • 1 sheet kombu (dried seaweed) (optional)

  • 1 cup shiitake mushrooms, thinly sliced


For the Ramen Bowl:

  • 4 packs fresh or dried ramen noodles

  • 2 hard-boiled eggs, halved

  • ½ cup shredded carrots

  • ½ cup roasted corn

  • ¼ cup pickled red onions

  • 2 scallions, thinly sliced

  • ¼ cup fresh cilantro leaves

  • 2 tbsp chili crisp (or more to taste)

  • 1 tbsp sesame seeds (optional)


Instructions:

Prepare the Honey-Glazed Roasted Pork

  1. Preheat oven to 375°F (190°C).

  2. In a bowl, whisk together honey, soy sauce, rice vinegar, hoisin sauce, sesame oil, garlic, ginger, and red pepper flakes.

  3. Place pork slices on a lined baking sheet and brush generously with the marinade.

  4. Roast for 20-25 minutes, flipping halfway and brushing with more marinade, until caramelized.

  5. Let the pork rest for 5 minutes, then slice thinly.


Make the Ramen Broth with Shiitake Mushrooms

  1. In a large pot, heat sesame oil over medium heat. Add garlic and ginger and sauté for 1-2 minutes until fragrant.

  2. Add the sliced shiitake mushrooms and cook for 3-4 minutes, until softened.

  3. Pour in chicken or pork broth and add soy sauce, miso paste, sake, mirin, and kombu.

  4. Simmer on low for 15-20 minutes to develop flavor. Remove kombu before serving.


3. Cook the Ramen Noodles

  1. Boil water and cook ramen noodles according to package instructions.

  2. Drain and divide into serving bowls.


Assemble the Ramen Bowls

  1. Pour the hot broth with shiitake mushrooms over the noodles.

  2. Top each bowl with slices of roasted honey pork, hard-boiled egg halves, shredded carrots, roasted corn, pickled red onions, scallions, and cilantro.

  3. Drizzle with chili crisp and sprinkle with sesame seeds.
