Ingredients:
3/4 Pound Semi Firm or Firm White Fish (sea bass or snapper)
3/4 cup Lime Juice (6 limes)
1/4 cup Orange Juice
1 tsp Honey (or agave)
2 large Plum Tomatoes (diced about 3/4 cup)
1 large Jalapeño (seeded and diced finely)
1/2 Small Red Onion (diced finely about 1/2 cup)
1 Clove of Garlic (minced)
1 Small Avocado (diced)
1/4 cup of Mint Leaves (chopped)
3 tbsp Cilantro (chopped or scallions)
Sea Salt and Black Pepper (to taste)
Directions:
Use fresh fish. Firm white fish can be -sea bass, snapper, tilapia , grouper, etc.
Place the fish in a large mixing bowl-set aside
In a small bowl, whisk together lime juice, orange juice and honey. Pour the mixture over the seafood to coat the fish. Cover and refrigerate for 20 minutes, stirring half way through.
Add the tomatoes, jalapeño, onion and garlic to the fish mixture. Season to taste with salt and pepper. Toss to combine. Cover and refrigerate for an additional 10 minutes.
Drain the mixture and transfer to a serving bowl. Gently stir in avocado, mint and cilantro.
Add salt and pepper to taste.
Serve with lime wedge and eat immediately.
