Creamy strawberry cheesecake filling is layered between rich brioche slices, pan-seared until golden and perfectly crisp. Finished with fresh strawberries and warm maple syrup, this indulgent French toast is made for leisurely brunches and special mornings around the table.

Ingredients:
Strawberry Cheesecake Filling
8 oz cream cheese, softened
¼ cup powdered sugar
1 tsp vanilla extract
½ cup fresh strawberries, finely diced
French Toast
8 slices brioche or challah bread
4 large eggs
½ cup whole milk
1 tsp vanilla extract
Butter, for cooking
For Serving
Warm maple syrup
Fresh strawberries
Optional: powdered sugar

Instructions:
Prepare the Filling
In a bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and creamy. Gently fold in the diced strawberries.
Assemble the French Toast
Spread a generous layer of filling over 4 slices of bread. Top with the remaining slices to create sandwiches, pressing lightly to seal.
Make the Batter
In a shallow dish, whisk together the eggs, milk, and vanilla until fully combined.
Cook
Melt butter in a skillet over medium heat. Dip each sandwich into the egg mixture, coating both sides. Cook for 3–4 minutes per side, until golden brown and warmed through.
Serve
Transfer to plates, top with fresh strawberries, and drizzle generously with warm maple syrup. Finish with powdered sugar if desired.
