Watermelon Napoleon is a refreshing dish that is both sweet and savory combining watermelon slices with a whipped lemon-feta mousse and mint.
Ingredients:
Watermelon, sliced thinly (three slices roughly 2x4 inches each)
8 oz block feta cheese
1/2 cup sour cream
1/2 cup mayonnaise
Zest from 1 lemon
1 small garlic clove, minced
1/4 teaspoon dried dill
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
Pinch salt
1/4 teaspoon black pepper
Pinch of red pepper flakes (more to serving if desired)
2 tablespoons olive oil
Directions:
In a food a food processor combine the feta, sour cream, mayo, spices, garlic, salt, pepper and red pepper flakes.
Pulse until well mixed
Place in a piping bag
Start with watermelon slice on the bottom, pipe or spoon mixture on top, put fresh thinly sliced mint on top of the mixture then layer the watermelon on top and repeat.
Place third slice of watermelon on top and drizzle olive oil and salt and pepper to taste.
Add edible flower to the top to elevate the look and serve.
