Ingredients:
For the Zucchini Roll-Ups:

2 large zucchinis, sliced lengthwise into ⅛-inch strips
1 tbsp olive oil
Salt and black pepper, to taste
For the Lemon Ricotta Filling:
1 cup ricotta cheese
1 tbsp lemon zest
1 tbsp lemon juice
1 tbsp fresh basil, finely chopped
1 tbsp fresh parsley, finely chopped
1 garlic clove, minced
¼ tsp red pepper flakes (optional)
Salt and black pepper, to taste
For the Roasted Tomatoes:
1 cup cherry tomatoes, halved
1 tbsp olive oil
½ tsp dried oregano
½ tsp garlic powder
Salt and black pepper, to taste
Garnish (Optional):
Extra basil leaves
Drizzle of balsamic glaze
Instructions:

Preheat the Oven & Grill:
Preheat the oven to 400°F (200°C) for the roasted tomatoes.
Preheat a grill pan or outdoor grill to medium-high heat.
Roast the Tomatoes:
Toss cherry tomatoes with olive oil, oregano, garlic powder, salt, and pepper.
Spread them on a baking sheet and roast for 15–20 minutes until soft and slightly caramelized. Set aside.
Grill the Zucchini:
Brush the zucchini slices with olive oil and season with salt and pepper.
Grill each slice for 1–2 minutes per side until tender with grill marks. Let them cool slightly.
Prepare the Lemon Ricotta Filling:
In a bowl, mix ricotta, lemon zest, lemon juice, basil, parsley, garlic, red pepper flakes, salt, and pepper. Stir well until creamy.
Assemble the Roll-Ups:
